ODETTE WILLIAMS is an Australian expat and baking fanatic who now calls Brooklyn home. After becoming a mother, Odette realized that she couldn't find any keepsake apron sets for her young children to don when they baked together, so she made some herself. Such a beautiful beautiful book. It really belongs on the coffee table, inspiring another coffee and piece of cake. Odette, this is a truly glorious cake experience, and thrilled to find a pavlova inside too. Highly recommend to anyone who has a family and loves to occasionally (now a lot more often) bake cake! Simply a joy. Must buy. Especially lovely gift for a friend, take a cake from the book along too! :)
This is a straightforward, easy to use cake making book you and yours will enjoy day in and day out.We have ordered 3 so far, 2 of those for gifts to dear ones. I would really like to give this 4.5 stars because this book is excellent at what it sets out to do (provide unfussy, delicious cake recipes) but does have some significant gaps.Simple Cake IS for you if you:~Want a few carefully curated recipes with LOTS of suggested variations to customize them. I call this book choose your own adventures with cake because each recipe has a list of flavor, size, and topping variations that makes it easy to have an astonishing amount of variety from just ten base cake recipes. It's incredibly fun.~Live surrounded by chaos and still want to bake. The author is a parent who bakes with her family, and it definitely shows with recipes that use minimal dishes and can be followed even while distracted. I successfully made the coconut cake with simple glaze while talking on the phone and the lemon yogurt cake with silky marshmallow frosting with interruptions and intermittent help from my six- and nine-year-olds, and it all turned out scrumptious.~Gravitate toward simple, rustic, unfussy bakes. Many of these recipes are designed so that you can be sitting down eating your sugary creation an hour and a half after you started baking. It's very nearly instant gratification.Simple Cake is NOT for you if you:~Want carrot cake. (I'm slightly bitter because as soon as I found out that I was getting this book, I planned to make carrot cake the instant it arrived. I was SO EXCITED to try a new take on my favorite cake only to find out when the book arrived two weeks later that there's no carrot cake recipe. Boo.)~Want a comprehensive book of cake recipes and techniques. In spite of the incredibly audacious claim that these are the only only cake recipes you'll ever need, there are some big omissions. Even if you don't count some of the trickier cakes (and I DO count them) like swiss rolls, angel food, genoise, etc., there are classics that are conspicuously absent. Where's the German Chocolate Cake? Where's the cheesecake? Where's the *cough, cough* CARROT CAKE?~Want a cookbook that includes decorating techniques and tips for polished finished products. This book is all about simple and quick and charmingly rustic rather than flawless. It's a breath of fresh air, yes, and makes everyday cake friendly and accessible, but if you're aiming for fancy, special occasion polish, look somewhere else.~Want vegan cake. A couple of the recipes could easily use egg and milk substitutes, but I think you'd have to be a fairly experienced baker to figure out how make it work. It would have been nice if the author had included a few vegan substitution suggestions in the plethora of possible variations offered. There's a gluten free recipe, why not include a vegan one as well?One final note: If you are a high altitude baker, the necessary alterations for your cakes to bake correctly are not included in the text. Usually adding an additional 1/4-1/2 cup of flour to the dry ingredients does the trick, but sometimes cooking times and temperatures need to be adjusted as well.Thank you, @tenspeedpress for the free book!
All right I will admit it. I am not a cake maker. Not sure I have ever made one. I do however love to bake. Up until now I always thought to make cake was a chore. Something someone else did for me to enjoy. It all just looked too time consuming and difficult. Icing a cake properly seemed like a job for someone with a culinary degree. I bake cookies, pies, and the very occasional french pastry. So, I was ready to face my fear of cake cooking when Ten Speed Press kindly sent me an advanced copy of Simple Cake for my honest review. ( Thanks for the free book, @tenspeedpress ! )This book made making cake so easy I feel like I have lost decades of cake baking. Odette Williams did an amazing job offering up 10 easy cake recipes that can then be combined with 15 different toppings. yes, this book has 150 different cakes in it.The book is beautifully designed on really nice paper and has amazing food and lifestyle photography by Nicole Frazen.There is great advice on every step of baking cakes from oven prep to digital scales to ingredient handling and prep. I always enjoy these types of chapters as I always learn some new tricks that makes be a better cook.Every recipe includes metric measurements. Both volume and weight. Thank you !!! This is a must for precise measuring and I was super happy to have it included.The book is broken into the multiple sections starting with a great note on cooking with kids, advice on measuring, prep and cooking techniques followed by oven advice and notes on equipment and pans.The last chapter includes 30 Cake worthy moments that are suggestions for the different combinations of cakes and toppings.Another great thing about Simple Cake is there is so much variation included within each cake recipe such as pan sizes and types, ingredients, and presentation.I chose to try 3 different recipes for this review. I started out with Very Vanilla Cake. I purchased a 6x3 round cake pan because I loved the look of it ( There are 4 other pan or cupcake options included) and I topped it with a Citrus glaze that included fresh orange juice from my orange tree. This was so good. The cake was a breeze to make. Taking about 20 mins prep time and 50 minutes over time. It was so moist and the outside had a great texture to it. What I really loved about it though was it did not skimp on vanilla. It included fresh vanilla bean seeds that were massaged into the sugar as well as over 2 tablespoons of vanilla. I find so many yellow cakes out there lack real flavor and this made the cake have an amazing flavor profile. The citrus glaze can have any citrus added to it be it lemon, orange, blood orange or grapefruit. It was easy to make and poured over the cake which eliminated any need to properly ice it.Next up I made the Oh, Canada! Lemon Berry Crumble cake. This was a combination of the Lovely Lemon Yogurt cake and the Berry Crumble. This can be served as is or warm with ice cream. I chose to make it because the minute I laid eyes on it I knew it would be amazing with my morning coffee. The tang of the Greek yogurt with the tartness of the berries and the high note of lemon zest made this the perfect coffee cake. Again so easy to make and a winner with my kids.Lastly, I made the Sleepover Cake. A combination of the Chocolatey Chocolate Cake and the Toberlone Ganache. Let me repeat that. Toberlone Ganache ! Made with melted Toberlone bar, butter, cream and vanilla extract. I am a lover of molten chocolate cake but have no interest in the complicated recipe. This mimics the taste and is so good. Made in smaller ramakin dishes it is a great way to serve cake to kids and vanilla ice cream is a must. Also, included is a caramel recipe to add to or replace the Toberlone if you wish. I am going to make these the next dinner party I have as they are easy to prep in advance and I know will make my friends groan with delight. Thinking of trying with a pinch of Maldon Sea Salt as well.
